Ingredients for Paneer Pasanda
Paneer (in one piece) – 300 grams
Corn flour / arrowroot / maida - 2 tbsp
Tomato - 5
Cream - 1 cup
Cashew - 10-15
Almonds – 10-15
Pistachio slices - 1 tsp
Raisins - 1 tbsp
Coriander powder - 1 tsp
Red chili powder - 1/4 tsp
Turmeric - 1/4 tsp
Garam masala - 1/4 tsp
Kasuri fenugreek - 1 tsp
Ginger paste - 1 tsp
Asafoetida - 1 pinch
Cumin - 1/2 tsp
Green chili - 2-3
Green coriander chopped - 2 tbsp
oil - as required
salt - as per taste
How to make Paneer Pasanda
To prepare flavorful Paneer Pasanda, first cut the paneer into square pieces one and a half to two inches broad and half an inch thick. Cut these pieces from the center to form a triangle. Now chop the dried fruits into little pieces as well. Following that, chop the tomatoes, coriander, and green chilies. Make a powder out of some cottage cheese for stuffing and mix with some chopped dry fruits (cashews, almonds, raisins). Then season with salt to taste.
In a mixing basin, combine arrowroot or cornflour and water to produce a thick, homogeneous batter. Add a pinch of salt and stir with a spoon to dissolve it. Take a triangle piece of paneer and cut it from the centre, leaving it connected to the bottom. Following that, place the paneer-dry fruits filling into the piece and construct the sandwich by softly pressing it. Similarly, create each paneer sandwich one at a time.
Heat the oil in a saucepan. When the oil is heated, add the paneer sandwiches and deep fry them till brown. Place the fried paneer sandwich on a dish after that. Following that, prepare a paste using the chopped tomatoes, green chilies, and coriander. Next heat some oil in a pan and add cumin, asafoetida, and cook it. Next add the ginger paste and cook it for a few minutes. Cook for a few seconds after adding tomato paste.
After 1 minute, add all of the dry spices, except the garam masala, and combine and sauté. After a while, when the masala has left the oil, add fresh cream. After some time, add 1 cup of water and bring the gravy to a boil. When the gravy begins to boil, add the fried paneer sandwich and stir it with a spoon. Lastly, season with garam masala and salt to suit. Serve the delectable paneer pasada veggie with green coriander leaves on top.
